Anywho… here is the riddle for the day.

You’re totally thinking Kale right??  You guessed it!

I have recently discovered two new and wonderful ways to enjoy Kale!  It all has to do with what you put on it!

I like to eat it raw as a salad.  I also like to cook it, but we are not talking about that today…

The first way involves one very easy ingredient ( besides the Kale) and a few little spices…

Here is the magic ingredient…

Ta Da!  Yep.  Avocado!

All you gotta do is cut your Kale, wash it, and put it in your bowl.

Then dump your avocado insides onto the Kale ( I use a whole avocado, I like a LOT of Kale!).

And then take your hands and mash it all together!

I usually put a little garlic powder, salt and pepper and I am done.  If you don’t have the time to season, just dump some ready-made guacamole on it and you are done even faster!

Who said fast and convenient has to be unhealthy?

This completely fills me up.  I love to eat this for lunch.

The other way I have been enjoying Kale is as a side to our dinner meal.  To mix it up, I make this simple dressing:

1TBS. Dijon mustard

Juice from 1-2 lemons ( or about 1/4 cup of already made lemon juice)

Olive Oil ( approximately 3/4 cup or so… eyeball this)

Fresh Garlic cloves 2-3

A touch of salt and pepper to taste

Mix it up in your blender ( I use our Ninja smoothie blender…) and you are good to go!

I love this. 

I will sometimes add artichoke hearts and tomatoes and any other salad topping, or just leave it as is.  Depends on how the mood strikes me!
