If there is one thing about summer, it is that the days just get away! I had every intention of writing a post yesterday and before I knew it, the day was gone!
It didn’t help that Maddox had a Migraine on Saturday night
Anywho- no complaints… on to the topic for today!
I mentioned in a previous post that I had read The Primal Blueprint by Mark Sisson. It left me with a few questions ( those are for another post…) and so Brent and I decided to also read The Paleo Diet by Loren Cordain.
Both books seemed to be based on scientifically proved research and make sense, I think it is just a matter of what seems to be the best fit for each individual.
I really focused my cooking on Paleo last week ( I did interject a few little Primal style recipes…) and thought I would share!
Here is what I cooked up for the fam last week…
I used recipes that I found on Pinterest and me being me, I didn’t really follow the recipe and added a little of my own flair
Stuffed Sweet Potatoes… The link to the recipe was broken so I just used the photo and made it up!

Looks like some dried cranberries, maybe ground turkey, pumpkin seeds??
Here is my stuffing…
Ground beef, spinach ( from my garden!), sweet potato, garlic… turned out yummy!
Next, Sausage and Spinach Stuffed Portobellos ( recipe here )
Chicken and Asparagus Rolls. Just omit the cheese and voila! (recipe here)
I actually sprinkled a tiny bit of goat cheese on them and added some avocado. On the side, Cauliflower whipped up to look like mashed potatoes… delish!
On the Cauliflower kick… Cauliflower crusted pizza. I didn’t take my own photo of mine, but I made it without the cheese… it kinda stuck to the baking sheet, but tasted good! (recipe here)
Last night was Brussel Sprouts with Bacon and Avocado (definitely more Primal…). There was no recipe, just this photo, so I flew by the seat of my pants and made it up! I just cooked the bacon first, removed it from the pan, used the bacon grease to cook the sprouts, added the bacon back in and topped it with avocado…
